Assistant Kitchen Manager - Clewiston - (Clewiston, FL)

The incumbent in this position is responsible for assisting in the supervision and daily operations of the food and beverage at the Swamp Water Café located on the Billie Swamp Safari. The individual assists in planning and directing food preparation in the kitchen, overseeing the food preparation and cooking activities to ensure meals meet the quality and nutritional standards. The incumbent also assists in supervision and the coordination of appropriate staff regarding special events, group reservations and caterings. Suggests menu changes; maintains inventory; orders supplies and equipment and assists in ensuring compliance with all food regulations. The individual is responsible for scheduling, evaluating and training staff, providing guidance and keeping control of the kitchen activities.
